Raw Black Beech Honeydew is a premium honeydew only found in one of the world’s remotest and most pristine, wild habitats – New Zealand’s South Island.
Honeydew is New Zealand’s only non-floral honey. High Peak Estate’s bees collect sweet dew found naturally on the trunks of Black Beech trees around the Southern Alps. Back in the hive, they combine this goodness with natural enzymes to ripen into honeydew. Simple, authentic and unadulterated.
Guilds of High Peak Estate’s Honeydew is raw and neither heat-treated nor excessively filtered. It is responsibly harvested, traceable, sustainable, and has minerals, trace elements and natural oligosaccharides (complex sugars) in greater levels than average flower honeys. Oligosaccharides are helpful in maintaining and promoting beneficial bacteria in the gut (probiotic bacteria), particularly assisting the recovery of healthy gut function after taking antibiotics. It also has higher levels of antioxidants than most flower honeys.
With a deep amber colour and taste of silky toffee, Raw Black Beech Honeydew has a hint of berry, and an earthy, smoky finish.
