Tom's Hands on Smoking Frame of BeesManuka Honey is unique to New Zealand and is created from the nectar of the native New Zealand Manuka tree (Leptospermum Scoparium).

High Peak Estate’s Royal Manuka Honey comes from the South Island of New Zealand and is pure and unadulterated. It is raw, responsibly harvested, traceable, sustainable and produced by bees that never forage on sprayed crops.

There are several different standards for measuring bioactivity in Manuka Honey, including Unique Manuka Factor (UMF), Total Activation (TA), and Molan Gold Standard (MGS). These standards are often expressed as numbers, e.g. UMF 10 or MGS 200 for example. Higher ratings usually mean higher prices paid for the honey.

Manuka honey producers and wholesalers can increase the bioactivity ratings of their honey artificially by heating and storing their honey for several months before sale. High Peak’s Master Beekeeper, Tom Dunbar, prefers to produce honey that is raw, unheated and pure than sell honey that has been heated and warehoused to artificially secure a high UMF or MGS number. Call us old fashioned but that just feels like the right thing to do.
