Guilds of High Peak Estate’s Raw Black Beech Honeydew is a premium honeydew that can only be found in one of the world’s remotest and most pristine, wild habitats – New Zealand’s South Island.

Internationally, honeydew is a well-known non-floral honey. In New Zealand it is only harvested in the top half of the South Island due to the presence of the native Black Beech (Nothofagus Solandri) tree in this region.

The bees of High Peak Estate collect sweet dew found naturally on the trunks of Black Beech trees in and around the New Zealand Southern Alps. Back in the hive, they simply combine this goodness with natural enzymes to ripen into honeydew. Simple, authentic and unadulterated.

Guilds of High Peak Estate’s Raw Black Beech Honeydew is raw and neither heat-treated nor excessively filtered. It is responsibly harvested, traceable, sustainable, and has minerals, trace elements and natural oligosaccharides (complex sugars) in greater levels than average flower honeys. Oligosaccharides are helpful in maintaining and promoting beneficial bacteria in the gut (probiotic bacteria), particularly assisting the recovery of healthy gut function after taking antibiotics. It also has higher levels of antioxidants than most flower honeys.

With a deep amber colour and taste of silky toffee, High Peak Estate’s Raw Black Beech Honeydew has a hint of berry, and an earthy, smoky finish.
